Rebecca's Reese's Peanut Butter Cheesecake

Our newest employee, Rebecca, has made quite an impression on us at Roy O'Brien Ford. Not only is she great at selling cars, but she can bake too! This recipe is so delicious, we don't have any doubt that you'll love it as much as we do.











Prep Time: 20 minutes
Cook Time:1 hour and 15 minutes
Total Time: 5 hours
Difficulty Level: Moderate

INGREDIENTS:

Crust
·  30 chocolate sandwich cookies
·  6 tablespoons butter, melted
·  Dash of salt
Cheesecake
· 32 oz cream cheese
·  5 eggs
·  1 1/2 cups brown sugar
· 1 cup smooth peanut butter
· 1/2 cup cream
· 1 teaspoon vanilla
· 12 oz Reese’s Peanut Butter miniature cups, unwrapped and roughly chopped

Topping
·  1/2 cup cream
·  1 cup semi-sweet chocolate chips
· 1 (8 oz) package Reese’s Minis
INSTRUCTIONS
1.    Preheat oven to 325°F.
2.    Put the chocolate sandwich cookies in a food processor and process until they form fine crumbs. Add in the butter and salt and process to combine. Press the mixture into the bottom and halfway up the sides of a 9-inch spring form pan. Bake for 10-12 minutes, and then set aside to cool. Wrap aluminum foil around the sides and the bottom of the spring form pan tightly to ensure water cannot leak through.
3.    Beat the cream cheese until smooth. Add in the eggs, one at a time, scraping down the sides of the bowl in between each addition. Add in the brown sugar, peanut butter, cream and vanilla; beat until combined. Gently fold in the chopped up Reese’s Miniatures. Pour the mixture into the cooled crust.
4.    Place the pan inside a larger pan and carefully add about 1 inch of hot water in the larger pan. Bake the cheesecake until it is just set, about 1 hour 15 minutes. Turn off the oven and allow the temperature to come down gently for about an hour. Remove from the oven, cool completely, then refrigerate until completely cool.
5.    To make the chocolate topping, heat the cream until simmering, just before boiling. Remove from the heat and add the chocolate chips. Allow the mixture to sit for a couple minutes, and then stir until smooth. Pour over the top of the cheesecake, allowing it to drip down the sides. Sprinkle the Reese’s minis over the top of the cheesecake.

Bob & Louise's Kool-Aid Pie Recipe

This weeks recipe comes to you from Bob & Louise. Bob is our Inventory Manager here at Roy O'Brien Ford. After trying this pie for the first time, they had to know the recipe. And now they are going to share it with the world.

Kool-Aid Pie



















Ingredients
1 – 8 ounce tub of Cool Whip
1 – 14 ounce can of Sweetened Condensed Milk
1 – Pack of Kool -Aid (unsweetened)
1 – 9 inch Graham Cracker Pie Crust

Directions
1.    Add all the ingredients together
2.    Pour into prepared graham cracker crust
3.    Chill for about 2 hours
4.    Serve
5.    ENJOY!

*May add strawberries, bananas and/or whipped cream to top of pie.

Ann’s Old-World Raspberry Bars Recipe

We are going to start something new here at Roy O'Brien Ford. On Fridays, we will be posting a recipe from one of our employees. Ann has been with Roy O'Brien Ford for 24 years. She is always cooking us delicious things to eat, so we thought one of her recipes would be a great thing to share for our first Friday Recipe. We hope you enjoy them as much as we do!

Ann’s Old-World Raspberry Bars Recipe

Old World Raspberry Bars by Ann
















Rich, moist bars filled with flavorful raspberry preserves

Servings
2 Dozen

Total Time
60 minutes

Raspberry Bars 

Crumb Mixture
  • 2 1/4 cups all-purpose flour
  • 1 cup sugar
  • 1 cup chopped pecans
  • 1 cup butter or margarine, softened
  • 1 egg
Filling
  • 3/4 cup raspberry preserves, or of your favorite flavor preserves
Directions
  • Heat oven to 350°F. Grease 8- or 9-inch square baking pan; set aside.
  • Combine all crumb mixture ingredients in large bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. (2 to 3 min.) Reserve 1½ cups crumb mixture; set aside.
  • Press remaining crumb mixture on bottom of prepared baking pan. Spread preserves to within 1/2 inch of edge. Crumble reserved crumb mixture over preserves.
  • Bake 40-50 minutes or until lightly browned. Cool completely; cut into bars.

Effortless Valentine's Day Treats

ST. CLAIR SHORES, Mich - Is baking not your forte? Is your time limited? Or maybe you are just looking for something quick and easy? We understand! This is why we want to share these Effortless Valentine's Day Treats! They take virtually no time, require little clean up, and are kid-friendly!


 XO Cupcakes
 These are adorable and SO simple! Bake your favorite flavor cupcake and top with a frosting of your choice! Use Cinnamon Imperials (or any large sprinkle decoration you want) to make X,O, and heart decorations on the cupcakes. Kids would LOVE to help with this dessert!
Effortless Valentine's Day Treats
We promise this isn't as complicated as it may seem! This can be done the evening before Valentine's Day! Once the few ingredients chill for 2-3 hours or overnight, roll the ball into chocolate chips and serve with a cookie of your choice!
This recipe is great to keep on hand. It takes only a few ingredients, all of which you will already find in your cupboards, and you can change the color of the M&Ms for any time of the year! With only a 20 minute baking time, you can throw this in while you're eating dinner and ta-dah!
 We know what you're thinking. "These look VERY time consuming!". The great part is, they can be as fancy or simple as you would like. Cut out hearts (or leave as squares) and glaze the top with melted chocolate. Add sprinkles or small candies for a more festive touch!

 Valentine's Day Marshmallow Pops
Dip marshmallows into melted chocolate and decorate with sprinkles! If you're in the holiday spirit, switch up the chocolate colors or dip the same marshmallow into two different flavors. This is another great recipe to involve the kids!
Chocolate Covered Pretzels
Very similar to the treat above, dip pretzel rods into melted chocolate and decorate!

Non-Cookie Recipes to Try This Christmas
ST. CLAIR SHORES, Mich - Christmas cookies are a great treat that many look forward to during the holidays, but why not try something new? Spice up your dessert options and give one of these non-cookie recipes a try this Christmas. From candied almonds to chocolate pretzels, each of these treats is unique and will definitely leave your tummy extremely happy!

Chocolate Peanut Butter Candies:

- 24 oz powdered sugar
- 16 oz crunchy peanut butter
- 1 cup butter or margarine, softened
- 12 oz semisweet chocolate chips
- 1 tbsp shortening


Position knife blade in food processor. Add half each of powdered sugar, peanut butter, and butter; top with cover. Process until thoroughly mixed. Shape into one-inch balls. Repeat process. Combine chocolate and shortening in top of a double boiler; bring water to a boil. Reduce heat to low; simmer until chocolate melts. Dip each ball in chocolate until partially coated. Place on waxed paper until chocolate hardens. Store in airtight container in refrigerator. Yield: about 7 dozen (4 per serving).


Homemade Peppermint Patties:

- 2 1/4 cups powdered sugar
- 2 tbsp softened butter
- 2 tsp peppermint extract
- 2 tbsp cream
- 12 oz melting chocolate wafers

- 4 cups pecans
- 1 cup sugar
- 2 tsp ground cinnamon 
- 1 tsp sea salt
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1 egg white
- 1 tbsp filtered water

Preheat oven to 250 degrees. Line a rimmed baking sheet with parchment paper to prevent nuts from sticking. In a gallon size Ziploc bag, combine sugar, cinnamon, nutmeg, and ginger. Seal tightly and shake to combine. In a second gallon size Ziploc bag, combine 1 egg white with 1 tbsp filtered water. After sealing, squish until frothy, about 20 – 30 seconds. Add pecans to the frothy egg white bag. Seal and shake well until nuts are evenly coated. Pour egg-y nuts into the bag with the cinnamon-sugar mixture. Seal and shake again until all nuts are coated. Pour nuts onto the lined baking sheet. Place sheet into 250 degree oven and bake for one hour, stirring every 15 minutes to prevent nuts from burning. Allow nuts to completely cool before packaging.


Chocolate Covered Pretzels:

- 1 Package of long pretzel rods
- Baker's semi-sweet chocolate
- Baker's white chocolate
- Assorted sprinkles, chopped nuts, etc.

Melt the chocolates in separate double boilers until chocolate is completely melted and smooth.  Remove from heat. Create an assembly line with the 2 bowls of chocolate, your choice of toppings, and a baking tray lined with tin foil. Using a spoon, spoon the chocolate over the pretzel, leaving a few inches bare as a "handle." Allow the excess chocolate to drip off the pretzels by twisting and wiggling the pretzel. This will help to avoid the chocolate pooling under the pretzel or into the toppings. Immediately cover chocolate with desired toppings and place on foil-lined baking sheet.  When the sheet is full, place it in the freezer to set for about 10 mins. Once set, they're ready to be served or kept in an air-tight container for a few days.
