Amy's No-Bake Energy Bites


This week's recipe comes from our very own Amy O'Brien. Amy recently received this recipe from her friend Kate, and loved it. These no-bake energy bites are great for an extra boost of energy in the morning. They are so simple to make, and taste so good! We hope that you enjoy them.


















Time: 40 minutes
Difficulty Level: Easy
Servings: 20-25 balls

Ingredients:
  • 1 cup quick cooking oats
  • 1 cup coconut flakes
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 cup ground flaxseed
  • 1/2 cup chocolate chips (optional)
  • 1 tsp. vanilla extract

Directions:
  1. Stir all ingredients together in a medium bowl until thoroughly mixed. 
  2. Cover and let chill in the refrigerator for half an hour.
  3. Once chilled, roll into balls of whatever size you would like. (Amy used a melon scooper)
  4. ENJOY!
